Linseed oil is obtained by pressing the seeds, sometimes followed by dissolution in a solvent. This oil is preferred in the diet because of its high levels of α-linolenic acid (an omega-3 fatty acid), but it is important to use only the oil intended for this purpose in cooking, as the remaining (boiled) linseed oil is heated and accepts treatment with chemicals that make it unfit for human consumption.
